After chilling , remove sides of springform pan. Serve w/ fresh whipped cream(1/2 c. sugar to 2c. cream) Happy eating!

Pumpkin cheesecake

Here is my recipe for pumpkin cheesecake. It has been tested by myself, my family, & several area Dr's. & nurses. It was a hit. I must admit, i loved it too.
Here it is tweaked a little from Cheesecake factory & a few other well-known chefs.
Crust: Mix & press into 10" springform pan:Wrap pan with heavy-duty wide aluminum foil & press firmly against pan.
Set into larger pan.
1/4 cup butter, melted
3/4 cup graham cracker crumbs
1/2 cup crushed gingersnaps
3 TBS. brown sugar
1 tsp. cinnamon
Filling:Note!Use cream cheese that is room temp/ slightly soft & eggs room temp!Do NOT over-beat/ use paddle beater preferably.More air means CRACKS!! Remember crack kills! Over-cooking will also produce cracks. It's important to make sure that the 3" center is slightly wobbly when ready to come out of the oven. It will finish cooking during standing time, alsoa water-bath is the best for a creamy-true cheesecake. ( a true cheesecake is a custard, not cake!)OK!!!
The filling!
1 cup whipping cream/Beat til soft peaks form, refrigerate til ready to add to filling.
Beat til fluffy:
3 , 8 oz. cream cheese (not lite! produces a yucky cheesecake) ROOM TEMP!!!
Add gradually til well combined:
1 &1/2 cups sugar
Add one at a timetill fluffy:
3 Eggs
Stir in:
1 can pumpkin
3/4 tsp cinnamon
3/4 tsp ginger
1/8 tsp all spice
1 tsp. vanilla
Lightly whisk fresh whipped cream & fold into mixture.
Pour into pan with prepard crust. Add hot water 1/2 way up sides. Bake 60 min.
Cool to room temp. Chill

A Day at the Creek

Saturday & Sunday we went to the creek & had a great time with our dearest friends( Herold & Karen Ray) & their kids & grandkids & a few of their friends from KC. Skip & I came home late Sat nite w/ Carly, got up early & fried chicken for our lunch.We spent all day there today playing in the creek w/ the kids. It was another great memory maker. Saturday was Alices birthday& thought it would be fun to take the kids camping. Alice is 33. WOW! Time flies when you're havin' fun!

Well, tonight I was sitting at Amy's feet(she was in the recliner) & Carly was in her bouncy seat on the floor, so I was talking to both of them & I had my head turned in Amy's direction talking to her when I heard a little coo fromCarly. I turned my head kinda quick to her & said, boo & smiled & she burst out in the cutest giggle! I did it several times & Brian was able to video her laughing & cracking up for a few minutes! She had little tears in her eyes, laughing so hard!I gave her time in between giggles talking to Amy & she let us know she wanted in on the conversation by getting our attention.It was PRICELESS!!I'm going to try to get that clip on my blog.(Ijust got out of the shower after swimming all day & I had no makeup on so I think she thought I looked quite funny!Great time to be videod!Also priceless was seeing my husband in the pool today with 7 grandchildren, yes, Carly too,his 2 daughters & myself, having a wonderful time, after losing a kidney to cancer 2 short years ago.In February he will celebrate 3 years of remission!Yes, I am truly blessed.Today made all the troubles of the world go away.It was nice...

Shrimp Dip
1 Lb.cooked shrimp, tail off, finely chopped
1 8 oz. cream cheese, softened
1/2 c. real mayo
1 green onion, finely chopped(white & green parts)
2 tsp.dijon mustard (Grey Poupon!)
dash hot pepper sauce
dash blk. pepper
Mix, chill, eat with buttery Town House crackers. Yum!
